Chai Bara Brith - A Welsh/Indian Fusion
Hey there, tea-time aficionados! Today, we're whipping up a tantalising treat that'll elevate your afternoon cuppa to new heights – our Sultana and Raisin Chai Tea Loaf. Get ready to indulge in a slice of sweetness that pairs perfectly with a steaming pot of chai tea. So, gather 'round and let's brew up some magic in the kitchen!
Ingredients:
- 400g self-raising flour
- 200g sultanas
- 300ml warm strongly brewed Chai Tea
- 200g raisins
- 100g dark muscovado sugar
- 2 tsp mixed spice
- 130ml milk (or alternative)
- butter (or ghee) for greasing the loaf tin
Instructions:
1. Begin by placing the raisins and sultanas in a large bowl. Pour the warm, strongly brewed Chai Tea over the dried fruit, then let it soak overnight. This step allows the fruit to plump up and infuse with the aromatic flavours of the tea.
2. Preheat your oven to 170 degrees Celsius and generously grease a 9×5 inch loaf tin.
3. After soaking overnight, sieve the flour over the soaked fruit mixture. Add the dark muscovado sugar, mixed spice, and oat milk to the bowl. Gently stir until all the ingredients are well combined, creating a luscious, aromatic batter.
4. Spoon the fragrant cake batter into the greased loaf tin, spreading it evenly. Place the tin on the middle shelf of the preheated oven and bake for approximately 1 hour and 20 minutes, or until the loaf is golden brown and a skewer inserted into the centre comes out clean.
