Delicious Fenugreek Chicken
This dish is quick, easy, delicious and good for you….
Ingredients
1.5 lb chicken thighs or legs
1 tbsp Mam'Ghee
2 tbsp grated Ginger
2 teaspoon Turmeric powder
4 Cloves
1 tsp fenugreek seeds crushed
1 Cinnamon Stick
4 Cardamom
1 Bay leaf
1 small lemon
1/2 cup cashew nuts soaked
overnight and ground into a paste
2 teaspoons Garam masala powder ,
adjustable
2 teaspoons Coriander Powder (Dhania)
1 tsp cumin seed powder
1 tbsp Kasuri Methi (Dried Fenugreek Leaves)
1 cup Methi Leaves or spinach
(Fenugreek Leaves) , roughly chopped
1/2 cup cilantro chopped
salt and pepper
Season the chicken with 1 tbsp ginger, 1 tsp turmeric, 1 tsp salt, juice of one small lemon and 1 tsp oil, and let it marinate anywhere from four hours to overnight. To start the stew, add a tbsp of ghee and saute the whole spices: 1 tbsp ginger, cloves, cinnamon, bay leaf, crushed fenugreek seeds and cardamom until fragrant. Add the chicken and cook on medium heat until the skin is lightly browned about 4-6 minutes.
Add the cumin powder, coriander seed powder, garam masala and saute for another minute. Add the cashew paste and cook till it smells sweet and not raw, about 2-3 minutes. Add the spinach, cilantro and kasoori methi (or spinach) just enough water to cover the chicken and any veggies, add salt to taste and pressure cook for 20 minutes or cook on low simmer for 40 minutes to an hour until chicken is well cooked.
